Sandwich Rolls

Ingredients
- 3 c. warm water
- 2 T. yeast
- 1/2 c. honey
- 2 eggs
- 4 T. lecithin
- 8-10 c. fresh milled flour
- 3 tsp. salt
Instructions
- Combine water, yeast and honey. Mix well. Allow to set until bubbly and it has risen slightly.
- Add eggs and lecithin. Gradually add flour, until dough pulls away from sides but is sticky to the touch. Knead/ mix until dough is smooth and elastic (6-8 minutes).
- Allow to rest for 20 minutes.
- Add salt. Mix well.
- Let rise until double in size.
- Shape into rolls. Rise again, until double.
- Bake at 350° for 16-18 minutes.
