Sandwich Rolls

Ingredients

  • 3 c. warm water
  • 2 T. yeast
  • 1/2 c. honey
  • 2 eggs
  • 4 T. lecithin
  • 8-10 c. fresh milled flour
  • 3 tsp. salt

Instructions

  • Combine water, yeast and honey. Mix well. Allow to set until bubbly and it has risen slightly.
  • Add eggs and lecithin. Gradually add flour, until dough pulls away from sides but is sticky to the touch. Knead/ mix until dough is smooth and elastic (6-8 minutes).
  • Allow to rest for 20 minutes.
  • Add salt. Mix well.
  • Let rise until double in size.
  • Shape into rolls. Rise again, until double.
  • Bake at 350° for 16-18 minutes.
