Melt butter in a medium size saucepan, add honey and peanut butter. Set aside and allow to cool (so as to not melt the chocolate chips you'll add later).
Mix together oats, quinoa crispies, and coconut sugar. Add cooled wet ingredients. Mix well. Add chocolate chips.
Spread onto 11x15 cookie sheet. Bake at 300° for 18 minutes.
Notes
We use sprouted oats from Costco.
Quinoa Crispies can be replaced with rice crispies. I buy both from Azure Standard
